Ingredients:
- 400 ml coconut milk
- 1x 10 g bag agar-agar powder
- 5 tbsp. agave syrup
- 1 lemon
- 1 tsp. chia seeds
- 1 mango
- sugar
- cinnamon powder
- coconut flakes
Coconut-Parfait:
Heat the coconut milk in a pot and bring it to a simmer.
Add chia seeds, agave syrup and the juice of one lemon and stir.
Then add the agar-agar powder and boil up for 2 min.
Fill the mixture in muffin trays and let it cool down in the refrigerator for about 30 minutes.
Mango-Mousse:
Die Mango schälen, mit dem Stabmixer pürieren und mit Zucker und Zimt abschmecken.
Peel the mango, puree with a hand blender and season it with sugar and cinnamon.
Serve the coconut parfait with mango mousse and garnish with mango slices and coconut flakes.
