ingredients:
- 1 kg carrots
- about 10 g ginger
- 1,5 l water
- 1/2 lemon
- 2 tbsp. coconut sugar or common sugar
- 200 ml Joya Finesse
- salt, pepper
- vegetable soup powder
- curry
Peel the carrots and dice.
Peel the ginger and dice.
Heat water in a pot and add the diced carrots and ginger into the boiling water.
Cook for about 20 minutes until the carrots and ginger are
soft.
Then puree the soft carrots and ginger with a hand blender.
Add sugar, lemon juice, salt, pepper, vegetable soup powder and Joya Finesse.
Refine with curry according to taste
Then cook for 2 to 3 minutes more.
Serve with toasted bread sticks (recipe follows!) and garnish.
